Keto Chocolate Chip Bread Recipe

Hi everyone!

Today I made a Keto Chocolate Chip Bread Loaf. For those that are new to low carb, high fat, moderate protein diets and are craving sweets and especially chocolate this might be something you're interested in! I adapted the recipe from :

His recipe is for mainly sandwich bread and isn't meant to be sweet so I added a few extra ingredients and modified his recipes to adapt it to more of a dessert recipe. This recipe can also be for diabetics since Stevia and Monkfruit Extract along with Erythritrol are essentially non-glycemic and don't have an effect on blood glucose. Monkfruit or Luo Han Guo is actually a Traditional Chinese Medicine Herb that helps nourish the lungs and is used for cough and sore throat, not that this recipe will necessarily cure your sore throat.

Wet Ingredients:

  1. 1/2 cup of 4th & Heart Ghee Butter Madagascar Vanilla Bean (Or just regular ghee or butter is fine)

  2. 2 tablespoons of Avocado Oil

  3. 7 large eggs (organic or pasture raised if possible), leave them out of the fridge until they are room temperature

  4. 5 drops of liquid stevia

  5. 1 teaspoon of vanilla extract

Dry Ingredients:

  1. 1 1/2 teaspoon of Baking powder

  2. 1/2 teaspoon of Himalayan Pink Salt

  3. 1/2 teaspoon of Xanthum Gum

  4. 1 cup blanched Almond Flour

  5. 1/3 cup of Organic Sesame Flour

  6. 1/3 cup of Organic Coconut Flour

  7. 3 tablespoons of Organic Psyllium Husk Powder

  8. 3 tablespoons of Organic Cocoa Powder

  9. 1/4 cup of Lakanto Monkfruit Golden Sweetener

  10. 1/2 cup of Lily's Dark Chocolate Chips, leave some to put on top of the bread as well, you can always add more or less according to taste and preference

Instructions:

  1. Pre-Heat Oven to 355 Degrees Fahrenheit or 180 Degrees Celsius

  2. Whisk Eggs for about 1-2 minutes on high if using an electric mixer, so that they're nice and fluffy

  3. Add the other wet ingredients and mix

  4. Add all of the dry ingredients and mix, after adding the dry ingredients, it may get a little thick, this is okay because the psyllium husk powder and coconut flour will absorb the liquid

  5. Add the mixture to a loaf pan lined with a baking sheet or be sure to spray the loaf pan with some avocado or coconut oil

  6. Add some of the divided Lily's Dark Chocolate Chips on top

  7. Bake for 50 minutes, but check at the 45 minute mark with a toothpick or skewer to make sure it comes out of the bread clean, thus indicating that it's fully cooked.

  8. Allow to cool before cutting and enjoy!
